Frontiers in Science Lecture: Phase Behavior of Soft Matter

School of Physics Frontiers in Science Lecture: Professor Arjun G. Yodh, University of Pensylvania

I will discuss basic physics phenomena that arise in the processing and design of chocolate products. I will then use these ideas as a springboard to describe some of our “latest” experiments with soft materials, especially research that pertains to creation of novel phases and phase transformations of particles suspended in water.
